Breakfast – a healthy and filling one – can increase your energy levels and can even help you concentrate better at work or in school. Breakfast is that meal that refuels your body’s glucose levels as you fasted throughout the night. Though people already know that breakfast is the most important meal of the day, surveys prove that not a lot of people eat this meal. Citrus Berry Smoothie

This is probably the best meal in a glass that takes a little under five minutes to prepare.

Ingredients:

  • 1 ¼ cups of fresh berries

  • ¾ cup of low –fat plain yoghurt

  • Half a cup of orange juice

  • 2 tablespoons of non-fat dry milk

  • A tablespoon of honey

  • ½ teaspoon of vanilla extract


Directions:

  1. Place all the ingredients in a blender and blend till smooth.

  2. Enjoy!




Pineapple-Raspberry Parfaits

This simple breakfast contains just 109 calories, 2mg of cholesterol and 23 grams of carbohydrates. And the great news is, it provides 60% of the required Vitamin C that you should take each day.

Ingredients:

  • 28oz containers or about 2 cups of non-fat peach yoghurt

  • Half a pint or 1 ¼ cups of fresh raspberries

  • 1 ½ cups of canned, frozen or preferably fresh pineapple chunks

Preparation:

  1. Divide then layer the raspberries, pineapple and yoghurt into 4 glasses.

  2. It’s ready to eat!



Tofu-Salsa Breakfast Burrito

Though this healthy breakfast can be done in five minutes, you can even make this burrito a lot quicker by skipping the skillet and simply combining the salsa, tofu, pepper and salt in a bowl.

Microwave the mixture for about a minute, then use soy cheese if you want to enjoy the vegan version of this burrito.

Ingredients:

  • A teaspoon of extra-virgin olive oil

  • Half a cup of extra-firm tofu (crumbled)

  • 2 tablespoons of fresh salsa

  • A pinch of salt

  • A pinch of freshly ground pepper

  • 18-inch tortilla (whole wheat variety)

  • 2 tablespoons of shredded Monterey Jack cheese
Preparation:

  1. Heat the oil in a small, non-stick skillet over medium to high heat. Add the tofu to cook, stirring occasionally until they turn brown. After two minutes, stir in the salsa, pepper and salt then continue to cook for about thirty seconds. Spread the cheese in the center of the tortilla.

  2. Top with the tofu mixture then fold in the tortilla ends and roll into your favorite burrito!





This simple breakfast has the following nutritional values – 259 calories, 13 grams of fat, 30 grams of carbs, 0 added sugars and 13 mg of cholesterol.
